Particularly when filling carbonated beverages, the correct choice of conveying gas has to be considered. Carbon dioxide and nitrogen are used. But the use of pure CO2 can cause over-carbonation, whereas the use of pure nitrogen can lead to de-carbonation. Depending on the degree of carbonation in the beer a suitable gas mixture has to be selected. Also, when conveying the beer through pipes and during tapping a gas mixture of about 70 - 75% nitrogen and 25 - 30% carbon dioxide should be used.
